The Science Behind Freeze-Dried Shelf Life

Shelf life in freeze-dried products is driven by two factors: water activity (Aw) and oxygen exposure. Freeze-drying brings Aw below 0.3 — the threshold where bacteria, mold, and yeast cannot grow. Below this level, the product is microbiologically stable indefinitely, as long as it stays dry.

Oxidation is the main remaining enemy. Lipids and pigments degrade in the presence of oxygen, which is why packaging matters as much as the drying process itself.
