How We Work
Our freeze-drying process transforms fresh fruit into shelf-stable ingredients for your production. Understand the science, processing ratios, cost structure, and how we can become your dedicated freeze-drying partner.

Freeze-Drying:From Fresh Fruit to Ingredient
Freeze-drying (lyophilization) is a precision method that removes up to 98% of moisture from fresh fruit while preserving nutrients, color, and flavor. The process happens in three stages: freezing, primary drying (sublimation), and secondary drying (desorption).
I
PHASE · 01Pre-Freeze
Freeze
Fresh fruit rapidly frozen to −40°C. Water transforms to solid ice crystals throughout the cellular structure.
II
PHASE · 02Primary Drying
Sublimate
Under deep vacuum, ice transitions directly to vapor without passing through liquid. 90% of moisture removed here.
III
PHASE · 03Secondary Drying
Desorb
Bound water molecules removed with gentle heat. Moisture content drops below 3% for 25-year shelf stability.
Our equipment maintains precise temperature and vacuum conditions throughout the cycle, ensuring consistent output and food safety. The result is an ingredient with a shelf life of 24-36 months that requires no refrigeration.
Energy input is significant - the process cannot be rushed without quality loss. This is why freeze-dried products command premium pricing compared to heat-dehydrated alternatives.
Raw Fruit to Freeze-Dried Output
Every fruit variety has a unique processing ratio based on its water content. Understanding these ratios helps you plan your ingredient costs and final product formulations.
Average Fresh → Freeze-Dried
Berry
Blueberry
5:1
5:1 ratio - 5kg raw blueberry yields 1kg freeze-dried. High water content, deep blue color, intense antioxidant concentration.
Berry
Strawberry
10:1
10:1 ratio - 10kg raw strawberry yields 1kg freeze-dried. Consistent yield, bright red color retention, popular for confectionery and snack inclusion.
Tropical
Mango
4.5:1
4.5:1 ratio - 4.5kg raw mango yields 1kg freeze-dried. Tropical fruit, slightly lower water content than berries, intense mango flavor.
Processing ratios are consistent because they reflect the natural water content of the fruit. Berries (higher water content) have ratios around 5:1 to 6:1. Harder fruits like apples range from 4:1 to 5:1. Tropical fruits like mango and pineapple fall in the 4:1 to 5:1 range. These are averages - seasonal variation of plus or minus 10% is normal.
Cost Structure& Volume Discounts
Our processing cost is industry-standard per kilogram of freeze-dried output. This covers the energy-intensive lyophilization process, quality control, packaging, and food safety compliance (ISO 22000, BRCGS).
Like all commodity processing, costs scale with volume. Single-batch orders pay a higher per-kg rate than ongoing suppliers who give us production predictability.
Volume discounts unlock at 1 ton minimum. Beyond that threshold, pricing becomes increasingly favorable because we can optimize production scheduling and reduce per-unit overhead.

Bring Your Own Raw Materials
Do you have a supplier relationship with fresh fruit growers or wholesale fruit distributors? You can bring your own raw materials and we will freeze-dry them under contract.
Contract manufacturing works well for buyers with exclusive fruit access, premium grades, or specific harvest timing. We handle the freeze-drying, quality control, and delivery of the finished ingredient.
You maintain control over sourcing, we ensure processing consistency. This model works for private label brands, food manufacturers, and distributors who want to differentiate on their own fruit provenance.
Your fruit source, our freeze-drying expertise
Reduced ingredient cost when you control the raw material
Flexible order sizes and custom packaging options
