Freeze-Dried Fig
Turkey is the home of the fig, and freeze-drying gives the fruit a new character: crisp and light, with a honeyed sweetness and the crunch of its tiny seeds. We offer fig sliced, diced and as powder.
Origin & sourcing
Turkey's Aegean region is the traditional heart of fig growing, and Turkish figs are known around the world. Our figs are sourced in Turkey and freeze-dried there. Lot-level origin details are declared on the specification sheet and the lot documents.
In freeze-dried form
Traditionally dried figs are dense and sticky. Freeze-dried fig keeps more of its volume and becomes crisp, with a honey-like sweetness and the gentle crunch of its many small seeds. The colour ranges from amber to purple-brown, depending on the fruit's skin and flesh.
Because figs are naturally rich in sugar, freeze-dried fig is a little denser than freeze-dried berries and benefits greatly from dry, sealed storage. In liquids and doughs the fruit rehydrates and becomes soft and jammy.
Fig's skin colour and seed-filled interior survive freeze-drying, so slices show the characteristic pattern of a cut fig. The sweetness is mellow and caramel-like rather than sharp, which makes fig a useful natural sweet note in bakery, cereal and confectionery recipes.
Available Formats
Slices show the fig's distinctive interior and suit decoration and snack packs. Diced fig goes into bread, granola, bars and chocolate. Powder is used in fillings, bakery, drinks and as a natural sweet component in blends.

Working with it in production
In bread doughs, diced fig can be added during mixing; it softens and becomes jammy during baking. For granola, add dice after baking. Keep the production area dry because figs' natural sugars attract moisture.
Storage & Handling
Store fig sealed, cool and dry, away from light. Its high natural sugar content makes it pick up moisture quickly once opened, so reseal packs straight away and avoid humid storage areas.
Freeze-dried products are hygroscopic: they take up moisture from the air. Keep them in the sealed original packaging in a cool, dry place away from direct sunlight and heat, reseal opened packs straight away and use clean, dry scoops.
